Oven Roasted Sweet Potatoes

Sweet potatoes are an incredibly healthy vegetable, full of vitamins and antioxidants! Even better, they are super tasty and provide a nice change from regular potatoes.  Eat them as a side dish or as a nutritious snack!

Here is everything you will need:

(Serves 4)

  • 3 medium-large sweet potatoes 
  • 2 tbsp vegetable oil
  • Salt and pepper
  • Red pepper flakes
  • 2 tsp ground cumin

Preheat the oven to 350 degrees.

Start by washing the sweet potatoes.  There is no need to peel them, the skin is delicious and adds extra fiber to this dish.

Next, cut the sweet potatoes in half lengthwise, then cut these lengthwise again.

Chop the quartered sweet potatoes into 1-inch cubes.

Spread the cubes on a baking sheet and drizzle with the oil.  Sprinkle with the salt, pepper, red pepper flakes, and cumin.  Toss this with your hands to coat all the sweet potatoes.  Put the tray in the oven for 1 hour.  Toss the sweet potatoes midway through the cooking time, so that all sides get evenly browned.

Tips and Tricks

  • If you want to speed up cooking time, you can roast these at 400 degrees for just 30 minutes. They are best when cooked low and slow, but they are still very yummy if cooked in a hurry at a higher heat.
  • You can change up the spices you add. Instead of cumin, try garham masala, cinnamon, ginger, allspice, paprika, curry powder, or dried herbs.  They are also great without any spices or herbs at all, just a little salt and pepper!
