Homemade hummus tastes so much better, and is so much healthier for you, than store bought. Once you try it once and see how quick and easy it is to make, you will never go back to the pre-packaged stuff again! In this version, I add plenty of fresh herbs to make a delicious green hummus. You can use any herbs you like; thyme, cilantro, oregano, tarragon, and mint all work as well as the basil and parsley used in this recipe. You could also omit the herbs completely for a more traditional hummus.
This is everything you’ll need:
- 1 handful each of basil and parsley
- 1 clove garlic, roughly chopped
- 2 tbsp tahini
- Juice and zest of 1 lemon
- 1 can chickpeas, rinsed and drained
- pinch of chili flakes
- salt an pepper
Place the herbs, garlic, tahini, lemon juice and zest in a blender and blend until very finely minced. Add some water and scrape down the sides of the blender if needed to really get a nice paste.
Add the chickpeas to the blender and blend until you get the texture you like. Hummus can be super chunky, very smooth, or anything in between. Transfer to a bowl and taste. Add salt, pepper, and chili flakes to taste.
