At the beginning of the week I set out to cook 4 recipes a week from the Oh She Glows cookbook, to be finished all 114 recipes by the end of May (I started with 39 already under my belt from when I first started the cookbook in September). I am happy to say this week was a success! Here is the fourth recipe for this week, and the 43rd in all; Winter Citrus Salad.
We had this with our breakfast this morning and it tasted like going on a tropical vacation. Bright fresh citrus fruits sprinkled with minty sugar that I blitzed in the food processor. Yummy! It gave me the energy to plan another round of vegan cooking and get all the groceries I needed for the upcoming week. On the agenda for this week: Eat your Greens Detox Soup, Butternut Squash ‘Parmesan’, and a few little treats that I will keep a surprise for my husbands upcoming birthday 😉
