Portobello “Steak” Fajitas – Recipe 48 #osgcookbook challenge


This is week 3 of my #osgcookbook challenge.  The goal: cook every recipe in Angela Liddon’s beautiful cookbook, Oh She Glows, by the end of May 2016. When I started this challenge, I had already made my way through 39 recipes.  Since then, I have successfully made 4 new recipes a week.  It has been a fun little project, and I’ve been pushed to try things I may not have bothered with otherwise.  Am I ever glad for that! Everything so far has been delicious!

I started this week with a dish from the Entrées chapter of the book – Portobello “Steak” Fajitas. They were very simple and straightforward to make. The mushroom slices get marinated in a mixture of lime juice, oil, and a few spices.  A little stir-fry is made with sautéed onion and peppers.  Put all this together with some tortillas and the usual array of fajita toppings (guacamole and salsa are a must!) and you have dinner!  The mushrooms were supposed to be cooked on a grill pan, which I did not own at the time.  I roasted them in the oven instead, which was okay, but I promptly bought a grill pan and am excited to redo this recipe as it was intended to be made.

We dug into this meal so quickly I totally forgot to take a picture before eating! Midway through dinner, I realized my mistake, stopped my husband, put his and my remaining fajitas together on a plate to make a somewhat presentable photo, and snapped away.  So in case you’re wondering why one is not quite like the other, it’s because he and I topped our fajitas a little differently.  Which, by the way, is part of the fun of this recipe!
