Last week I went on a beautiful trip to Western Canada to celebrate the engagement of my brother-in-law, Nakul, and my future sister-in-law, Natasha. #nana2017 !!! 😉 We all went on an incredible hike at Lake Louise together. Talk about breath-taking nature! The snow-capped mountains, the crystal clear turquoise water, the gorgeous horizons – just amazing! Dhiren and I also snuck away for a little romantic getaway to a part of British Columbia called Radium Hotsprings. As you may have guessed, it is the sight of natural hot springs as well as beautiful views of the rocky mountains. We chilled out in the hot springs, saw a lot of cool wild life, took some great photos, and enjoyed some scrumptious local food.
While staying with Nakul and Natasha, they introduced us to dark chocolate almond milk. Yummy!!! I don’t know why I never bought this before! I would always just pass over it at the grocery store. What a fool 😛 When we got back home Dhiren insisted we buy some for ourselves and although I hesitated to keep something so dangerously addictive in the fridge, I had to finally agree. This morning I decided to use it in a smoothie – because when you add fresh fruit to chocolate milk it becomes healthy, right??? Hehe. Anyway, the result was seriously delicious so I just had to share the recipe with you!
A tip for making smoothies – I like to prepare single servings of smoothie ingredients in plastic zip bags in the freezer. That way, when I want to make a smoothie, I just dump a plastic baggie of frozen fruits (and sometimes veggies) into my blender, add some liquid, and then hit the button. Zoom zoom! To do this yourself, simply place all the ingredients in this recipe – except for the peanut butter, almond milk, and water – into a baggie, and throw it in the freezer. Then, when you are ready to make it, just empty the contents into the blender, add the peanut butter, milk and water, and you are good to go! Using frozen fruits just makes the smoothie that much more deliciously frothy and cold. Mmmmmm. I like to make several bags like this so I can have smoothies in the mornings all week long with little time or effort. Cheers to that!
(Makes 1 medium smoothie)
- 1/2 cup strawberries
- 1/2 cup blueberries
- 1/2 a banana, cut into bite-sized chunks
- 1 tbsp peanut butter
- 1 cup chocolate almond milk
- 1/4-1/2 cup water (Start with 1/4 cup and add more if needed as blending)
Place all ingredients in a high-speed blender and pulse a few times until things move more easily. Add more water if the mixture is too thick. Blend on full speed for 20-30 seconds longer until everything is smooth. Enjoy!
